Ponk is a soft, green sorghum/Jowar grain harvested prematurely in Surat and its border region in Gujarat. It is a short-season winter food, eaten fresh before the crop dries into regular jowar. The regional speciality for generations, now roasted and mixed with tasty and wholesome regional fruits, seeds, digestives and masalas.
